Arborio Rice (Riso Arborio): 1 cup

Mushrooms (Funghi): 8 oz (225g), sliced

Baby Spinach (Spinaci baby): 2 cups, loosely packed

Onion (Cipolla): 1 medium, finely chopped

Garlic Cloves (Spicchi d'aglio): 2-3, minced

Vegetable Broth (Brodo vegetale): 4 cups, warm

Dry White Wine (Vino bianco secco): 1/2 cup

Parmesan Cheese (Formaggio Parmigiano): 1/2 cup, grated

Heavy Cream (Panna fresca): 1/4 cup

Butter (Burro): 2 tablespoons

Olive Oil (Olio d'oliva): 2 tablespoons

Salt (Sale): To taste

Black Pepper (Pepe nero): To taste

 

Instructions (Istruzioni):

 

Sauté the Mushrooms (Rosolare i funghi):

In a large pan, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium heat.

Add the sliced mushrooms and sauté until they're golden brown and have released their moisture. Set aside.

 

Sauté the Aromatics (Rosolare gli aromi):

In the same pan, add the remaining tablespoon of olive oil and sauté the chopped onion until it's translucent.

Add the minced garlic and sauté for another minute until fragrant.

 

Cook the Risotto (Cuocere il risotto):

Add the Arborio rice to the pan and toast it for a couple of minutes, stirring frequently.

Pour in the dry white wine and let it simmer until mostly absorbed by the rice.

 

Gradually Add Broth (Aggiungere gradualmente il brodo):

Begin adding the warm vegetable broth, one ladleful at a time, to the rice mixture. Stir continuously and allow the liquid to be absorbed before adding more broth. Repeat until the rice is creamy and cooked al dente.

 

Add Spinach and Mushrooms (Aggiungere gli spinaci e i funghi):

When the rice is nearly done, stir in the sautéed mushrooms and baby spinach. Let the spinach wilt and the flavors meld into the risotto.
